Schooling – Not Just For Fish!

Quick, what kind of nets are used to catch halibut? If you answered “none”, you’re right! If you have Alaskan halibut on your menu right now, or any of Alaska’s varied seafood options, you might want to check out the Alaska Seafood Marketing Institute’s Alaska Seafood U.
A quick and easy online certification program that will enrich your knowledge of all things Alaskan, Alaska Seafood U will help you educate your staff so that they can really sell more of these great seafood options. The course takes about 40 minutes and is divided into three sections; About Alaska, Health and Nutrition and Species and Catch Methods.
Why not tie Alaska Seafood U to a promotion or sales contest? Give your servers or counter workers two weeks to hop online and go through the class (ask them to print out the diploma and bring it in). Then, after they have completed the course, put an easy sales incentive in place – whoever sells the most halibut (or salmon, or black cod) gets a nice little perk!
Another on-line course you can put yourself (or your staff) through is Green Chefs Blue Ocean; a collaboration between Chefs Collaborative and Blue Ocean Institute. Their training program will give you a great introduction to sustainable seafood and will help you put your commitment to work.
In addition to the training programs, both ASMI and Green Chefs Blue Ocean offer tons of great resources so that you and your staff can stay informed and educated all year long.
