These Top Ten Food Trends for the year come from the National Restaurant Association’s 2012 Restaurant Industry Forecast. Although this information is geared towards fast-casuals, any restauranteur should find this information useful. The top ten food trends:

  • Fruits and vegetable sides in kids’ meals
  • Gluten-free items
  • Low fat or nonfat milk and 100-percent orange juice options in kids’ meals
  • Locally sourced or produced
  • Lower-sodium items
  • Spicy items
  • Lower-calorie options
  • Mini-desserts or dessert bites
  • Low-fat foods

We’re always interested in thinking about how trends like these can be linked to effectively serving more seafood. For instance, if customers are looking for gluten-free items, why not work up a fish-n-chips recipe that doesn’t include gluten. That way, if customers ask, you’re ready to accommodate them. People who aren’t worried about gluten won’t even notice…

Spicy items, low-calorie and low fat foods – those trends were just made for seafood! Grilled fish and shellfish, salads featuring seafood, healthy soups – seafood is a lean protein that’s incredibly versatile.

Locally Sourced Seafood

Locally sourced or produced seafood is also just a phone call away! The trend suggests adding fruits and vegetables, low fat or non-fat milk, and we’ll just go ahead and add to that list some kid friendly seafood! Shrimp, fish nuggets, even sushi - its fun to eat with your hands and seafood plays right into that.
