They each contain their own personality, a soul and energy that you feel the moment you pass through the threshold.
Lisa insists that her cuisine maintains its integrity, and claims “it all comes down to the quality of the ingredients and the methodology.” When speaking about her restaurants, she proclaims “we use the best brands and we know what to do with them. We are not reinventing, we are just using the best of the best.” Her food is never overworked or contrived and reflects her philosophy – that when you cook with love and passion you feed the soul.
Her advice when it comes to cooking seafood is to favor consistency, and keep it simple, rather than some really multi-dimensional dish…less is more. Ultimately, “who you source with and what you do with it will make either a great meal or a mediocre one.”
Chef Dahl is a long standing member of the James Beard Society and is also a Chaine de Rotisseurs member – Maitre de Table Restaurateur. Lisa’s mantra, “in food we trust”, illustrates her culinary passion and her hope for “customers to feel the love in the food, to have a memory when they leave that they will savor for years to come.”
