Born on Italy’s Tuscan Coast, Chef Vincenzo Scarmiglia was destined to grow up to become chef of one of Las Vegas’ most renowned Tuscan restaurants. Chef Scarmiglia knew he wanted to join the culinary world at a young age, and began working in a small restaurant at 15. After graduating from culinary school, he took a job at the renowned il Gamberol Rosso. His career took a short hiatus with a year of duty in the Italian Military (as a Military Chef), before he returned (with a promotion) to il Gambero Rosso.

Chef Scarmiglia moved to the U.S. to open Valentino Las Vegas in 1999 and after 6 award winning years moved on to help open Bartolotta Ristorante di Mare as Assistant Chef where his extensive knowledge of European seafood was a huge asset. Then came the opportunity of a lifetime, the chance to join the acclaimed restaurant family the Maccionis as the Executive Chef of Osteria del Circo inside The Bellagio Resort. In 2010, the Maccioni family asked Chef Scarmiglia to move to the new Aria Resort & Casino to open Sirio Ristorante as executive chef, where he happily returns to his Tuscan roots, cooking the food he loves.

Whether Chef Scarmiglia is presenting house smoked swordfish carpaccio or lobster-filled ravioli with artichoke tomato ragú, you know he’s doing it with true respect for the world’s freshest seafood.
