To help you make educated choices when you purchase seafood, we have developed a new Seafood Product Guide for the products we offer. The guide will provide you with all of the critical information you need to know about a particular item:

  • Origin
  • Wild or Farmed
  • Method of Catch
  • Form and Size
  • Season
  • Inventory/Special Order
  • Fresh or Frozen
  • Special Order Guidelines
  • Sustainable (color code)
  • Characteristics
  • Product number

Every item we offer is included on its own page and contains the information listed above. We looked at an item’s seasonality, availability, pack sizing, whether it’s an inventory item or special order and of course the sustainability rating color. We have also included some interesting information about each item such as its history, taste profiles, texture notes and other relevant information.

To use the guide, simply find the product you are interested in, go to that page and everything you need to know should be on one page. For example, if you open up the page for Manila Clams you will learn that these tasty little clams are farmed year-round and generally come from Washington State. We pack them in a 5 lb. bag and keep them in inventory at all times (although we do caution about some summertime spawning issues). There are approximately 18 – 24 clams per pound and they are rated Green on our sustainability scale, making them a great choice.

We encourage you to not only use our Product Guide to help you plan menus and place orders, but also as an educational tool for yourself and your staff. When you add an item to your menu, offer the corresponding page to your front of the house crew – they will appreciate the opportunity to learn more about the ingredients they are selling, and they will be ready to answer your customers’ questions.

We also added information on some of our more custom cuts. For instance, we offer the unique “Santa Monica Seafood Cut”, developed for chefs who want to serve whole fish, but have concerns about bones. We take smaller fish, like loup de mer or farmed striped bass and remove the head, pin bones and back bones. Both fillets remain attached at the tail, creating a very elegant presentation.
