SHELLFISH HANDLING TIPS
Live Mussel Handling and Storage Information
Properly handled and stored mussels have a shelf life of at least 10 days from harvest (sometimes as long as 14-21 days). Below are some tips that will help you optimize the shelf life of your product:
|
Upon arrival, drain the product of any standing water, by either making holes in the bottom of the box or transferring to another container. Never let mussels sit in water.
Mussels like ice; it retards bacteria and doubles the shelf life. Do not pile mussels, spread them out, cover with a damp cloth and bury them in ice. Be sure they are stored in a container that allows for drainage of the melted ice.
Store them in a moist, cool (38-40°F) place.
Please note mussels may gape when they are out of the water. This does not necessarily mean that they are dead. If you have mussels that are open ice them down and gently tap them, they should close up.

Utilizing these techniques will ensure that you have a fresh, healthy product to offer your guests.
